Ever have one of those Mondays filled with...Monday-ness? Today is like that to the point that I fear I'll lose my copy again or Mailchimp won't send if I don't do this quickly. Fingers crossed, everyone.
In spite of the tech glitches, let's get to New Bread #4 of 2025: Apricot Cherry Sourdough Bread. We've gone through a couple iterations of this bread to (hopefully) get the right balance of apricots to cherries. This is Einkorn's first "sweet" inclusion (Sage Einkorn, which we've brought back this week, was its first "savory" inclusion), and we've added a bit of lemon zest to enhance the fruit flavors. This one toasts up nicely, and that's important in bread, right?
We're also featuring our Kernza Sourdough Bread, which is a favorite to some. I think it's our most interesting bread in some ways. ("Interesting" means that I cannot quite nail down its aroma or flavor. It smells amazing when we bake it, with an aroma that's somehow grassy and yet cinnamon-y. There's a hint of sweetness when you taste it, despite not having any added sugars, and butter enhances that sweetness. If you look up its flavor description, though, it's often described as nutty.)
And let's not forget Spelt, one of our workhorse breads, along with Einkorn. Spelt has recently become my go-to bread. I've been toasting that one up with almond butter or peanut butter for breakfast, and I have a new appreciation for it. I heard a podcast last week describe toast as being its own food group, and the more I think about it, the more true that seems.
